Easy Chicken Shawarma Recipe (adjust ingredients to your liking)
Ingredients:
For the Chicken Marinade:
1.5 lbs chicken thighs, boneless and skinless
1 cup Greek yogurt
1/2 cup tomato paste
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp lemon juice
1 tbsp tomato paste
1 tsp ground cumin
1 tsp ground coriander (I skipped this because I didn’t have any)
1 tsp ground paprika
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp ground black pepper
1 tsp salt
For the Vegetables (Estimates):
2 large sweet potatoes, peeled and cubed
1 large onion, sliced
2 cups broccoli florets
2 tbsp olive oil
Salt and pepper to taste
For the Garlic Lemon Parmesan Sauce:
2 cups of chicken broth
1 cup of milk or heavy whipping cream
2 tablespoons of flour
2 cloves garlic, minced (or garlic powder to taste)
2 tbsp lemon juice
1/4 cup grated Parmesan cheese
Salt and pepper to taste
For the Sautéed Green Beans:
1 lb green beans, trimmed
2 tbsp olive oil (or butter)
2 cloves garlic, minced
Salt and pepper to taste
Instructions:
Marinate the Chicken:
In a large bowl, combine Greek yogurt, olive oil, garlic, lemon juice, tomato paste, cumin, coriander, paprika, turmeric, cinnamon, black pepper, and salt.
Add the chicken thighs to the marinade, ensuring they are well-coated.
Cover and refrigerate for at least 2 hours, or overnight for best results.
Prepare the Vegetables:
In a bowl, toss the sweet potatoes, onions, and broccoli with olive oil, salt, and pepper.
Preheat the air fryer to 375°F (190°C).
Cook the Chicken and Vegetables:
Place the marinated chicken thighs in the air fryer basket.
Add the prepared vegetables around the chicken (or air fry separately).
Air fry for 20-25 minutes, turning the chicken halfway through, until the chicken is cooked through and the vegetables are tender.
Make the Garlic Lemon Parmesan Sauce:
In a small bowl, chicken broth, milk and all ingredients (whisk until smooth).
Heat up on low heat until it thickens. Add more ingredients until it thickens to your desired texture.
Sauté the Green Beans:
In a skillet over medium heat, add olive oil and garlic.
Add the green beans and sauté until tender-crisp, about 5-7 minutes.
Season with salt and pepper to taste.
Serve:
Once the chicken and vegetables are done, remove from the air fryer and let rest for a few minutes.
Drizzle with the garlic lemon Parmesan sauce.
Serve the sautéed green beans on the side.
